    Vegan Ginger Tea Biscuits – Gluten Free

    Vegan Ginger Tea Biscuits

    Let’s start with acknowledging how much we all love tea. Because we all do, right? Is there anything better than a piping hot cup of tea, on the couch, under a blanket, curled up with a good book… oh I’m getting too relaxed to write here just thinking about it. And what’s the only thing that can make tea even better? Well, Vegan Ginger Tea Biscuits of course.

    Cookies that were made to be dipped and dunked in a comfy cozy cup of tea. And these Vegan Ginger Tea Biscuits are made for just that.

    Vegan Ginger Tea Biscuits

    How to make them

    • Preheat your oven to 350°F
    • In a small pot over medium-low heat, melt the coconut oil, molasses, and almond butter together. Stir frequently.
    • In a mixing bowl, combine the almond flour, coconut flour, baking powder, salt, sugar, and spices. Use a whisk to stir well so they are evenly combined.
    • Once melted, pour the coconut oil mixture over the dry ingredients and fold everything together with a spatula until the consistency is evenly combined.
    • Divide the dough into 8 portions and roll into balls – or use a cookie scoop to make it fast and easy. Then, slightly flatten each ball with your hand or the back of the cookie scoop.
    • Bake at 350°F for 15 minutes.
    • Let the cookies cool for 10+ minutes or until they stay together when you pick them up. And then get cozy and get dunking with your favorite cup of tea!

    • ½ cup Almond flour
