    Overnight Soaked Oats – Goji Berries & Almond Butter

    Overnight Soaked Oats

    Overnight Soaked Oats are all amazing. But, this particular combination just happens to be my personal favorite. It has every essential ingredient for the most spectacularly delicious outcome. Or… well… as spectacular as soaked oats can be. Creamy, nutty, decadent almond butter? Check. Mini chocolate chips that sneak their way into every single bite? Check. Chewy, sweet, bursts of Goji Berry perfection? Check.

    For these single-serving overnight soaked oat recipes, I’ve played with the ratios just a bit to get creamy, ready-to-eat perfection right out of the jar. Typically, when we make large batch soaked oats, we’ll all add a splash of almond or soy milk to our bowls. A little bit of extra milk on soaked oats has the same effect as on cereal. It just makes it better. With soaked oats, better means creamier. YUM.

    So to get that creaminess without having to add anything to the jar in the morning, we played around with the ratios until we found the one that worked perfectly.

    How to make Overnight Soaked Oats & digestibility

    Add all of the ingredients into your mason jar or air-tight container. Place the lid on the jar, and pop it in the fridge overnight. By morning, your oats are ready to eat, sit down and lounge, or grab breakfast on the go. It’s as easy as breakfast can get – and oh so healthy, too.

    Overnight Soaked Oats

    If you’ve ever had a no-bake cookie or raw cookie dough made with oats and had a stomach ache after, you might be more sensitive to the decreased digestibility of raw oats. They also contain naturally occurring phytic acid which makes it more difficult for your body to absorb the nutrients in the oats. Soaking oats for at least 12 hours helps to neutralize that phytic acid content and makes the oats easier to digest.

    Overnight Soaked Oats – Goji Berry & Almond Butter

    These Overnight Soaked Oats combine sweet, antioxidant rich goji berries with smooth, creamy almond butter for a perfect whole grain breakfast or snack. Prepare these overnight soaked oats the night before, and they are ready to enjoy the next morning. Or pack them to go for a healthy lunch or snack any time of the day.

    Ingredients

    • ⅔ cup Plant based milk (soy, almond, cashew, oat etc)
    • ⅓ cup Rolled oats use certified GF if necessary
    • 2 tbsp Almond butter
    • 1 tbsp Goji berries
    • 1½ tsp Coconut sugar
    • 1 tbsp Mini dairy free chocolate chips optional

    Instructions

    • Combine all of your ingredients in a small container or mason jar. Stir to combine evenly, and seal with an air tight lid. Place in the fridge overnight to soak.
    • Once your oats have soaked overnight, they are ready to eat. Enjoy!
