This is one of those recipes where I don’t have to shout IT’S VEGAN from the rooftops, right? I mean, it’s blueberries, sugar, and lemon. Whole food plant-based compatible? No. Keto-friendly? Not really. Paleo? I’m still not honestly sure of the rules for that one. But, vegan? YES, of course! It’s a quick & easy Blueberry Compote!

Moving to a vegan diet, there were many things we ate that had to change completely. Others only needed small tweaks. And then delicious favorites like Blueberry Compotes didn’t have to change at all. Some of the best things we’ve always eaten have been vegan all along! That being said, I did reduce the sugar as much as I could without compromising the flavor.
Certainly, we could all benefit from eating less sugar. But there’s still plenty of room in a well-balanced vegan diet for brunch staples like waffles, crepes, and pancakes smothered in warm, fruity compotes. For instance, I’d much rather my kids top their pancakes in a compote than straight-up maple syrup!

Quick & Easy – just like it sounds
While you’re making your waffles, crepes, or pancakes, you can prep this well-balanced compote on the stove and not miss a beat in your other cooking.
In a nonstick saucepan on medium heat, add your frozen blueberries, lemon juice, and sugar. (I used organic cane sugar but coconut and plain white sugar work just as well.) Now… are you ready for it… just stir! With a spatula, stir the compote every few minutes to make sure the ingredients are well combined and it’s not sticking to the pan. In less time than it takes to make your fluffy breakfast carb of choice, your sweet, warm, homemade blueberry compote will be ready and waiting to serve.

Quick & Easy Blueberry Compote
Equipment
- Sauce pan and spatula
- Measuring cups and spoons or a kitchen scale
Ingredients
- 2 cups Frozen blueberries
- ¼ cup Organic cane sugar Can sub white sugar or coconut sugar
- 1½ tsp Lemon juice
Instructions
- Add frozen blueberries, lemon juice and sugar to a sauce pan on medium heat
- Cook 8-10 minutes on medium to medium low heat until blueberries are soft and liquid has reduced and thickened slightly
- Serve immediately while warm or set aside for later use on your favorite pancakes, waffles, crepes and more
- Enjoy!
